Eggplant Parmesan
I had never
tried eggplant until today and man I did not know what I was missing. It was delicious and I can’t wait to make it
again. Super easy and super cheap.
Next pour your Italian style bread crumbs in one bowl and your egg whites in another bowl.
Pre heat
your oven to 350 degrees and grease your cookie sheet with a little olive oil.
Then blot
the standing water from the eggplant with a paper towel. Now it’s time to prepare your eggplant. Dip each piece individually into the egg
whites and then the Italian bread crumbs evenly around. Place them each on your greased cookie
sheet. Put in the oven for about 15
minutes or till tender.
While they
are in the oven place your Italian tomato sauce in a sauce pan and begin to
heat.
Bring
eggplant out of the oven and pour some sauce over eggplant. Sprinkle some mozzarella cheese on top and
pop it back in the oven. Only long enough to melt the cheese.
Take out of
the oven and get ready to taste an awesome meal.
